Mini's is happy to announce our Sex and the City 2 Cupcakes.  SKYY Vodka has created 5 special cocktails for the new movie and we have recreated them in cupcake form.  In addition to the new five flavors we will have our original Carrie Cosmo as part of the new collection.  These cupcakes will be available in limited quantities at both locations or by special order.  In addition, we have been provided with some special swag from the movie and these items will be available on a first come first serve basis until the items are gone with each six pack purchase.  Each six pack is 15.00 and the most popular flavors will be available by single purchase after Memorial Day.  Please call if you have any questions.  Downtown, 801-363-0608, Sugarhouse, 801-746-2208.

- Glamour Gal - Lemon Cupcake, soaked in SKYY Vodka, Creme de Casis, and lime juice.  Frosted with Lemon Butter creme topped with fresh lime zest.

-Park Avenue Princess - Madagascar Vanilla Bean Cupcake soaked in 7up, merlot wine and lemon juice.  Frosted with Butter Creme topped with all white pearls and gems.

- Blonde Ambition - Madagascar Vanilla Bean Cupcake, soaked in SKYY infused pineapple vodka, triple sec, and Creme de Cacao.  With Lime frosting with a roasted and candied pineapple slice on top.

- Red Over Heels - Red Velvet Cupcake soaked in SKYY infused ginger vodka, honey, and lemon juice.  Frosted with Cream Cheese and a slice of candied ginger on top.

- Mr. Manhattan - Dark Chocolate Cupcake soaked in Coke and Bourbon, frosted with Dark Chocolate Ganache with a Cherry on Top.

Coconut tastes like the tropics and looks like snow—a perfect midwinter treat. It’s a staple main-dish ingredient in southeast Asian cooking, but in the U.S., it’s used most gloriously in baking.

“Coconut is why I opened this shop,” says Leslie Fiet, owner and chef baker of Mini’s Cupcakes and the new Retro Cafe. “It’s my favorite flavor. I love Dean & DeLuca’s coconut cupcakes—they are worth the price tag of $6. Basically, I went into the food business because I had to have a place to get good coconut cupcakes.”

At Mini’s, coconut shows up in lots of cupcakes—the Blue Hawaii, a tribute to Elvis, mixes coconut and pineapple and replaces buttermilk with pineapple juice in the cake. The Snowball is a Madagascar vanilla bean cake topped with Swiss meringue and a shower of shaved coconut.

Fiet enjoys one—or two—with her tea every day at four o’clock, when she closes shop.

Mini's Retro Cafe is now open and currently serving some of the best food you remember from your childhood.  Come in for breakfast have some cereal, oatmeal, cream of wheat, or hot cinnamon rolls.  For lunch we have mac and cheese, Fluffernutters, Jell-O, grilled cheese, and many other yummy eats.  We are serving between 11 and 3 or until the food runs out.  Mini's Retro Cafe is located right next to Mini's Cupcakes Downtown.  Come in, enjoy, and bring back some of your favorite memories.

Back by popular demand, the Carrie Cosmo!  We will no longer have the carrot cake on Fridays, we will have our most popular cocktail cupcake.  The Carrie Cosmo is a cranberry cupcake soaked in cranberry juice and vodka, frosted with lime frosting topped with a fresh cranberry. 

Sometimes you just gotta let people know your a winner.  And Mini's is a winner! Voted best chocolate cupcake with Salt Lake Magazine and Best Cupcake with City Weekly.  Not too shabby...
